Cheesy Garlic Bread
To make this tasty recipe, look for leftover, reduced-price bread loaves in the supermarket bakery section. Make several loaves and freeze. You'll have an economical side dish or snack at your fingertips.
1 medium French bread loaf, unsliced
1/2 cup butter or margarine, softened
2 cloves garlic, halved
1 tsp dried parsley
cup grated Parmesan cheese
Preheat oven to 375°F. Cut slices down the length of bread loaf at 1-inch intervals, without cutting all the way through.
Rub slices and top of loaf with cut sides of garlic halves. Mince garlic.
Combine butter, garlic, parsley and Parmesan in a small bowl. Spread butter mixture between bread slices and on top of loaf.
Wrap bread in foil, leaving top partially uncovered. Bake until heated through, about 15 minutes.
For easier peeling, microwave unpeeled garlic cloves on HIGH for 10 to 20 seconds. Cool and store unpeel-ed cloves in a plastic bag in the refrigerator for up to 2 weeks. Save time and satisfy the real cheese lovers in your family by using sliced provolone cheese instead of the grated Parmesan.
