Warm Chicken Salad
Bone the chicken breasts yourself instead of buying packaged chicken cutlets. With a little practice, you'll be able to do it quickly and save over one dollar per pound.
1/4 cup soy sauce
1/4 cup brown sugar
2 tsp vegetable oil
1/2 clove garlic, crushed
6 boneless chicken breasts
8 cup salad greens
1/2 cup shredded carrot
1/2 cup green bell pepper, chopped
1/2 cup green onions, sliced
1 cup mayonnaise
3/4 cup plain yogurt
Preheat grill. Mix soy sauce, brown sugar, oil and garlic. Reserve 1/3 of marinade. Brush over chicken. Grill, basting with reserved marinade, about 10 minutes. Cut into strips. Keep warm.
Combine salad greens, carrot, bell pepper and green onions in a salad bowl; toss lightly to mix.
For dressing, blend mayonnaise and yogurt in a small bowl.
Toss chicken strips with salad greens. Spoon dressing over warm chicken and salad. Serve immediately.
Check the produce section for packages of washed, torn and ready-to-serve mixed salad greens. Shake them from the bag into your favorite salad bowl and just add the chicken and dressing.
