French Onion Soup

You can keep a lid on odors in the refrigerator if you store onions in a screw-top glass jar. Dont store them in plastic as the odor will permeate the plastic and affect the taste of other food.
Ingredients
3 medium onions, thinly sliced
1 Tbsp butter
1 1/2 tsp flour
2 (14 oz. cans) beef broth
1 salt and pepper
4 slices of French bread
1/2 cup part-skim mozzarella cheese
Directions

Sauté onions in butter in a large saucepan over medium heat until tender.

Sprinkle onions with flour. Cook for 2 to 3 minutes, stirring continually, until golden brown.

Add broth, salt and pepper to taste. Simmer for 20 minutes. Preheat broiler.

Ladle the soup into ovenproof bowls. Top each with toast slice and sprinkle with mozzarella. Broil until cheese melts.
Great Ideas
Caramelized onions (prepared through step 2 and wrapped in foil) will keep in the freezer for several months. Theyll be ready next time you prepare this recipe. The onion wont slip on your cutting board if you slice it in half from top to bottom, then lay the cut side down and slice into the desired thickness.
