Breaded Fish Fillets
Frozen fish fillets are always available in the freezer section of the supermarket. They will keep for 2 to 3 months in your freezer and often cost less than fresh fillets.
1 cup seasoned bread crumbs
1/2 tsp garlic powder
1/2 tsp dill
1/4 cup mayonnaise
1 1/3 Tbsp water
6 cod fillets
Preheat oven to 425°F. Place bread crumbs in a shallow dish. Add garlic powder and dill; mix well. Blend mayonnaise and water in a second shallow dish.
Pat fillets completely dry with paper towels. Spray a baking sheet with nonstick cooking spray.
Dip fillets in the mayonnaise mixture, coating completely, then roll in bread crumbs. Place on a prepared baking sheet; do not allow fillets to touch.
Bake for 20 minutes or until fish flakes easily with a fork.
Defrost frozen fish slowly in the refrigerator. There will be less loss of moisture. Try baking the fish on individual pieces of parchment paper. You can then easily lift and slide the fillets onto a plate in one piece.
