California Cobb Sandwich

When avocado prices are high, save money on this Cobb Sandwich by making roasted garlic mayonnaise instead. Mix 1 teaspoon roasted garlic paste and 1/3 cup mayonnaise. Then add the lemon juice, salt, green onion and egg.
Ingredients
1 egg
1 ripe avocado
1 Tbsp lemon juice
1/2 tsp salt
1 Tbsp mayonnaise
2 Tbsp green onions
4 sandwich rolls, split
2 oz blue cheese
8 slices of turkey breast
4 slices of crisp-cooked bacon
4 slices of Cheddar cheese
8 slices of tomato
4 leaves of iceberg lettuce
Directions

Place egg and enough water to cover in a small saucepan. Bring to a boil over high heat; cook for 5 minutes. Drain and cool. Peel and chop egg. Meanwhile, scoop avocado pulp into a bowl.

Add lemon juice and salt to avocado, mashing with a fork until smooth. Stir in mayonnaise, green onions and egg. Spread avocado mayonnaise over rolls. Sprinkle with blue cheese.

Press down gently on blue cheese. Top with turkey, bacon, Cheddar, tomato and lettuce.

Replace roll tops. Press down firmly to compact sandwich ingredients. Cut each sandwich into halves.
Great Ideas
If an avocado is hard and unripe, use a quick-ripening trick. Place the avocado in a brown paper bag with an apple. Poke a few holes in the bag and leave at room temperature until the avocado softens, about 2 days.
