Baked Cod with Dill Sauce
Cod may be expensive or unavailable in some parts of the country. This Baked Cod recipe will work just as well with other less expensive, firm fish such as haddock, pollock or orange roughy.
1 1/2 lb cod fillets
1/2 tsp salt
1/2 tsp pepper
3/4 cup sour cream
1/4 cup mayonnaise
2 Tbsp all-purpose flour
1 Tbsp lemon juice
1 tsp dried dill
Preheat oven to 400°F. Grease a medium baking dish. Pat fillets dry. Sprinkle fillets with salt and pepper.
Place fillets in prepared baking dish.
Combine sour cream, mayonnaise, flour, lemon juice and dill in a small bowl; mix well.
Spoon sauce over fillets. Bake until fish flakes easily with a fork, about 10 minutes.
For perfect Baked Cod every time, follow a simple rule: cook 10 minutes for each inch of thickness, measured at the thickest part of the fish. For a 1/2-inch fillet, cook for 5 minutes; for a 11/2-inch steak, cook for 15 minutes.
