Easy Peanut Brittle
Raw peanuts are perishable and have a limited shelf life. To protect your investment and increase the storage potential to make more Easy Peanut Brittle later, keep peanuts refrigerated for up to 1 month, or freeze for up to 3 months.
1 cup raw peanuts
1 cup sugar
1/2 cup light corn syrup
1/4 tsp salt
1 Tbsp butter or margarine
1 tsp vanilla extract
1 tsp baking soda
Grease a baking sheet or jelly roll pan. Place peanuts, sugar, corn syrup and salt in a medium microwave-safe dish. Microwave on HIGH for 2 minutes. Stir to mix well.
Microwave peanut mixture on HIGH for about 5 minutes. Add butter and vanilla extract; mix well.
Microwave peanut mixture on HIGH for another 11/2 minutes. Add baking soda; mix well.
Spread peanut mixture into prepared pan. Cool completely. Break peanut brittle into pieces to serve.
For a quick and easy cleanup, line the jelly roll pan with plastic wrap and spray with cooking spray. The Peanut Brittle will then be easy to remove from the pan, and you can simply discard the plastic wrap.
