Banana Chocolate Chip Bread Recipe
Banana Bread and chocolate lovers will find this bread delightful! Leftovers of this scrumptious Banana-Chocolate Chip Bread can be the beginning of a fabulous dessert idea. Make individual bread puddings, or toast slices and top with your favorite chocolate ice cream.
2 cup all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 stick of butter or margarine, softened
1/2 cup sugar
1 1/4 cup smashed bananas
1 cup chocolate chips
1/2 cup pecans or mixed nuts, chopped
Preheat oven to 350°F. Grease a loaf pan. Combine flour, baking powder, baking soda and salt in a large bowl; mix well.
Beat butter and sugar in a small bowl with an electric mixer set at medium speed until fluffy, about 1 minute. Add eggs, 1 at a time, beating well after each addition.
Add butter mixture to flour mixture; stir just until blended. Stir in bananas, chocolate chips and pecans.
Spoon batter into prepared pan. Bake until a toothpick inserted in center of loaf comes out clean, about 50 minutes. Cool bread completely in pan.
Banana Bread recipe tip: One pound of bananas usually 3 medium or 4 small will yield 11/4 cups mashed banana. Freeze mashed bananas for up to 6 months. Just mix in 1 teaspoon lemon juice for each banana to keep the pulp from darkening.
