Middle Eastern Tuna Pita

This Middle Eastern-style Tuna Pita sandwich is a great way to use leftover rice that will save money, too. Simply substitute 1 1/2 cups cooked rice white, brown or basmati for the bulgur.
Ingredients
1 cup bulgur or other cracked wheat
1 cup boiling water
1 (7-ounce) can tuna
1/2 small onion
1 large tomato, chopped
1/4 cup fresh parsley, chopped
1 tsp dried mint
1 Tbsp lemon juice
1 tsp salt
3 Tbsp olive oil
4 leaves of lettuce
2 large whole wheat pitas, halved
Directions

Place bulgur and boiling water in a medium bowl. Let stand until water is absorbed, about 15 minutes.

Meanwhile, drain tuna; flake into a small bowl. Finely chop onion. Add tuna, onion, tomato and parsley to bulgur, stirring well to combine.

Add mint, lemon juice, salt and oil to bowl; mix well.

Place a lettuce leaf in each pita pocket; fill with salad.

Tuna Pita recipe tip: Make super-quick work of boiling water. Place 1 cup water in a 2-cup glass measuring cup. Microwave on HIGH for about 3 minutes.
