Bacon Spinach Roll

For an equally tasty spinach roll recipe that is also economical, try 1/2 cup chopped ham instead of the bacon. Look for the supermarket special baked, boiled, low-salt or country ham will work well.

Ingredients

1/2 lb bacon, chopped

1 medium onion, chopped

2 (10-ounce) packages frozen spinach, thawed

1 1/2 cup shredded Cheddar cheese

1/2 cup bread crumbs

1 large egg

1/2 tsp salt

1/2 tsp pepper

1 (16-ounce) package frozen French bread dough, thawed

1 large egg beaten

2 tsp sesame seeds

Directions

  1. Preheat oven to 350°F. Cook bacon and onion in a medium skillet over medium-high heat until bacon is cooked through and onion is tender, about 5 minutes. Drain.

  2. Drain defrosted spinach, pressing out excess moisture. Combine bacon mixture, spinach, Cheddar, bread crumbs, egg, salt and pepper in a large bowl; mix well.

  3. Unroll dough onto a baking sheet. Form into a 14-inch square with a floured rolling pin. Spread spinach mixture over dough, leaving a 1-inch border. Roll up dough jelly-roll style. Pinch edges.

  4. For topping, brush dough with egg; sprinkle with sesame seeds. Bake roll until golden, about 25 minutes. Slice and serve.

Spinach Roll recipe tips: If you are in a rush, skip step 1. Instead, mix 2 tablespoons packaged bacon bits and 2 tablespoons freeze-dried onions together and proceed as recipe directs.
