Holiday Cranberry Bread
Fresh cranberries are least expensive in the winter. Double this Cranberry Bread recipe and use a whole bag of berries. You will eliminate waste, plus you will have one loaf to keep and three to give as gifts.
1 1/2 cup sugar
1 stick of margarine, softened
1 cup sour cream
2 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp salt
1 1/2 cup fresh cranberries
Preheat oven to 350°F. Grease and flour 2 loaf pans. Beat sugar and margarine in a large bowl with an electric mixer set at medium speed until fluffy, about 2 minutes. Add vanilla and eggs; mix well.
Add sour cream to bowl; mix well. Add flour, baking soda and salt; mix well.
Stir in cranberries. Divide batter between prepared pans.
Bake bread until a toothpick inserted in center comes out clean, about 55 minutes.
Cranberry Bread recipe tip: To avoid a soggy crust, let the bread cool completely before covering in plastic wrap.
