Ingredients

20 oz cod fillets

3 Tbsp olive oil

1/2 cup orange juice

1/2 cup lemon juice

1/4 cup lime juice

1/2 tsp hot red pepper sauce

1 cup minced red onion

6 green onions

1 Tbsp minced garlic

1/3 cup finely chopped parsley

1/4 Tbsp pepper

  1. Preheat oven to 400°F. Grease a baking sheet. Arrange fillets on sheet. Brush with 1 tablespoon oil. Bake until fish flakes easily with a fork, about 15 minutes.

  2. Meanwhile, combine orange juice, lemon juice, lime juice, remaining oil, hot pepper sauce, vinegar, salt, onion, green onions, garlic, parsley and pepper in a small bowl; mix well.

  3. Flake fillets into a large bowl. Add juice mixture; mix well.

  4. Spoon salad into individual bowls. Garnish with red onion rings.
