Mustard-Broiled Sole Fillets
Fresh fillet of sole can be costly, depending on the season and your location. You can save money by substituting another widely available and less expensive white fish fillet, such as tilapia or orange roughy.
2 lb sole fillets
1/2 tsp salt
2/3 cup mayonnaise
3 Tbsp Dijon mustard
2 Tbsp grated Parmesan cheese
2 tsp dried dill or chives
Preheat broiler. Grease broiler pan. Place fillets on prepared pan. Sprinkle with salt.
Combine mayonnaise and mustard in a small bowl; mix well. Spread over fillets.
Sprinkle fillets with Parmesan.
Broil fillets until top is lightly browned and fish flakes easily with a fork, about 7 minutes. Sprinkle with dill. Arrange fillets on a serving platter.
Broiled Sole Fillets recipe tip: For quick cleanup, line the broiler pan with aluminum foil; coat with cooking spray. Then just remove and discard the foil after cooking the fillets.
