Sunday Brunch Potato Casserole
When a potato casserole recipe calls for a small chopped onion, you will get more for your money using a large one. Chop the whole onion, then use half in the recipe and freeze the other half for later use.
1/2 lb bacon
1 small onion, chopped
5 large russet potatoes, peeled, grated
1 tsp salt
1/4 tsp pepper
2 eggs, beaten
Preheat oven to 400°F. Grease a medium baking dish. Cook bacon and onion in a large skillet over medium heat, stirring frequently, until onion is tender, about 5 minutes.
Combine bacon, onion, potatoes, salt, pepper and eggs in a large bowl; mix well.
Pour potato mixture into prepared dish. Bake for 15 minutes.
Reduce oven temperature to 375°F. Bake potatoes until golden brown, about 40 minutes. Cut into 6 pieces to serve.
