Vegetable Pasta with Ham
Pappardelle are wide, ribbon-like noodles. If your grocer does not carry this pasta, or if you would prefer a less expensive substitute, use broken pieces of lasagna noodles for this Vegetable Pasta recipe.
8 oz pappardelle noodles
2 tsp vegetable oil
1 cup broccoli florets
1 small onion, chopped
1 cup mushrooms, sliced
1 cup cherry tomato, halves
1 cup ham, chopped
2/3 cup shredded Parmesan cheese
2 Tbsp butter
Cook pasta according to package directions; drain. Add oil to pasta; stir to coat.
Meanwhile, heat butter in a large skillet. Add broccoli, onion and mushrooms. Cook over medium heat, stirring occasionally, until tender, about 10 minutes.
Add pasta, cherry tomatoes and ham to skillet. Cook until heated through, about 5 minutes.
Divide pasta among individual plates. Sprinkle with Parmesan.
Vegetable Pasta recipe tip: Save time by microwaving the broccoli first for 2 minutes and using 4 sliced green onions instead of the white onion. Then proceed as recipe directs in step 2.
