Golden Catfish Sandwich
Homemade tartar sauce can be a cost-saver for this Catfish Sandwich. Just mix 1 cup mayonnaise, 1 tablespoon minced onion, 1 teaspoon each minced dill pickle, minced olives and sweet relish and 1/2 teaspoon lemon juice.
2 cup vegetable oil
1/2 cup cornmeal
1/2 cup all-purpose flour
1 tsp baking powder
1 1/2 tsp salt
1 lb catfish fillets
2 eggs, lightly beaten
1/4 cup tartar sauce
2 sesame seed sandwich buns, split
1 cup shredded lettuce
Heat vegetable oil in a deep skillet to 375 F, or until a drop of water sizzles. Combine cornmeal, flour, baking powder and salt in a medium bowl; mix well.
Place beaten eggs in a shallow dish. Dip fillets into beaten eggs, then coat well in cornmeal mixture. Fry in batches until golden, turning once, about 5 minutes. Drain on paper towel.
Spread tartar sauce over top halves of each bun. Place some lettuce over tartar sauce.
Arrange fillets over bottom halves of buns. Replace tops.
Catfish Sandwich recipe tip: The breading will stick better if you refrigerate the cornmeal-covered fish for at least 30 minutes before frying.
