If crisp rice cereal is not a staple in your pantry, look for the individual serving-size variety packs. Use the rice cereal for these crunchy Cheese Crispies and save the rest of the varieties for breakfast.
2 cup all-purpose flour
1/4 tsp salt
1/2 tsp cayenne pepper
2 sticks of margarine, sliced
12 oz Cheddar cheese, shredded
2 cup crisp rice cereal
1/4 cup sesame seeds
Recipe makes 56 Cheese Crispies
Preheat oven to 350°F. Mix flour, salt and cayenne pepper in a medium bowl. Cut in margarine with a pastry blender or two knives until coarse crumbs form.
Add Cheddar, cereal and sesame seeds to bowl; mix well.
Divide dough in half. Shape each half into a log on waxed paper. Slice dough into 1/2-inch discs.
Arrange discs on baking sheets. Bake until crispies are firm and golden, about 15 minutes.
Cheese Crispies recipe tip: Freeze the dough logs ahead to have ready for quick hors doeuvres. Wrap each log in plastic wrap and freeze for up to 2 months. Then just thaw slightly, slice, and bake as the recipe directs.
