Pineapple Bars - Frosted
For a super way to save money, purchase the grocery stores brand of canned pineapple. It is often about half the price of the nationally advertised brands while still just as tasty.
2 cup all-purpose flour
2 cup sugar
2 eggs, beaten
1 (20-ounce) crushed pineapple, reserve 2 teaspoons juice for frosting
1 tsp baking powder
1 tsp vanilla extract
3 oz cream cheese, softened
3 Tbsp butter or margarine
1 3/4 cup confectioners' sugar
1/4 cup slivered almonds
Preheat oven to 350°F. Grease a medium baking pan. Combine flour, sugar, eggs, undrained pineapple, baking powder and vanilla in a large bowl; mix well.
Pour batter into prepared baking pan. Bake until a toothpick inserted in center comes out clean, about 35 minutes. Let cake cool about 20 minutes before frosting.
Meanwhile, beat cream cheese, butter, pineapple juice and confectioners sugar in a medium bowl with an electric mixer set at medium speed until fluffy, about 2 minutes.
Spread frosting over cooled cake. Sprinkle almonds over top. Cut into bars.
Frosted Pineapple Bars recipe tip: For neat slices when cutting the bars, dip the knife in hot water, then wipe clean between each cut.
