Linguine Topped with Red Clam Sauce
The price of pasta varies considerably depending upon the brand. There is no need to buy the expensive imported brand. Any variety made with semolina flour will work just as well.
1 tsp olive oil
1 small onion, chopped
2 cloves garlic, chopped
28 oz crushed tomatoes
1/2 Tbsp dried thyme
1/2 Tbsp salt
1/4 Tbsp pepper
8 oz linguine
6 oz chopped clams, drained
1/2 Tbsp dried basil
Heat oil in a large skillet over medium heat. Add onion and garlic. Saute until onion is tender, about 5 minutes.
Add tomatoes, thyme, basil, salt and pepper to skillet. Simmer, uncovered, for about 25 minutes.
Meanwhile, cook pasta according to package directions; drain. Place on a serving platter.
Add clams to skillet. Cook until heated through, about 5 minutes. Spoon over pasta.
To save time, use a 26-ounce jar of prepared spaghetti sauce and just add the clams before heating and serving.
