Ham and Pasta Salad
If you do not grow chives or if they are too expensive in the market, you can use the top of a green onion instead in this Ham and Pasta Salad. Chop finely or snip with kitchen scissors. This will spare you the cost of fresh chives.
8 oz pasta shells, cooked, drained
1 1/2 cup chopped cooked ham
1/2 cup chopped green bell pepper
1/2 cup sliced celery
1/2 cup sliced radishes
1/4 cup chopped green onions
1/2 cup reduced-fat mayonnaise
1/2 cup fat-free yogurt or fat-free sour cream
2 tsp Dijon mustard
1 clove garlic, crushed
1 tsp chopped chives
1 tsp tarragon vinegar or cider vinegar
1/4 tsp salt
Combine pasta, ham, bell pepper, celery, radishes and green onions in a large bowl.
Combine mayonnaise, yogurt, mustard, garlic, chives, tarragon vinegar and salt in a blender. Process until well blended.
Pour dressing over salad. Toss gently to combine. Chill until serving time.
Spoon salad onto a serving platter. Serve immediately.
Ham and Pasta Salad tip: Save time by using a food processor fitted with the slicing disk for cutting the vegetables. Save even more time by using the grating disk to shred the ham.
