Caribbean Shrimp Kebabs
If the shrimp for these Caribbean Shrimp Kebabs are not on sale or too pricey, you can use chicken instead for a satisfying supper. Purchase 11/2 pounds skinless, boneless chicken. Cut the meat into 1-inch cubes for perfect kebabs.
2 Tbsp soy sauce
2 Tbsp honey
3 cloves garlic, minced
1 1/2 tsp curry powder
2 Tbsp lime juice
2 Tbsp brown sugar
3 Tbsp vegetable oil, divided
1 1/2 lb shrimp, peeled, deveined
Combine soy sauce, honey, garlic, curry powder, lime juice, brown sugar and 1 tablespoon oil in a large bowl. Whisk until brown sugar is dissolved.
Add shrimp to bowl; stir well to coat. Cover; chill for about 20 minutes.
Meanwhile, soak several wooden skewers in a shallow dish of water for 20 minutes. Preheat grill.
Thread shrimp onto skewers. Grill, turning and brushing with marinade and remaining oil, until shrimp are browned, about 5 minutes on each side.
Caribbean Shrimp Kebabs tip: To keep the shrimp from spinning on the skewer, insert the skewer through both ends of each shrimp.
