Grilled Chicken and Avocado

Coarse-grained mustard provides a pleasing flavor and texture to this Grilled Chicken and Avocado. If it is not a staple in your pantry, use Dijon mustard instead for an equally good flavor at a lower cost.
Ingredients
2 Tbsp coarse-grained mustard
1/3 cup olive oil
3 Tbsp lemon juice (about 1 lemon)
2 Tbsp honey
1/2 tsp salt
1/4 tsp pepper
4 skinless, boneless chicken breasts
1 large avocado
6 oz mozzarella cheese, sliced
4 tomatoes, sliced
Directions

Mix mustard, oil, lemon juice, honey, salt and pepper in a large bowl with a fork. Reserve half the dressing; set aside. Add chicken to bowl; turn to coat. Cover; chill for 20 minutes.

Preheat grill. Cook chicken, turning once, until juices run clear when meat is pierced with a knife, about 10 minutes per side.

Meanwhile, cut avocado lengthwise. Remove pit. Peel and cut avocado into thin slices. Place mozzarella over chicken. Grill until cheese is melted.

Arrange tomatoes on a serving platter. Slice chicken. Arrange chicken and avocado alternately over tomatoes. Drizzle with reserved dressing.
