Turkey with Bow Tie Pasta
This family-favorite Turkey with Bow Tie Pasta is budget friendly. To lower the cost even more, use skinless, boneless turkey thighs or even chicken breast instead of the pricey turkey tenderloin.
3 Tbsp olive oil
2 cloves garlic, minced
10 oz turkey tenderloin, cut into 1-inch cubes
2 cup broccoli florets
1 (14-ounce) can Italian-style tomatoes
1 tsp dried basil
1/8 tsp cayenne
1/4 cup white wine or chicken broth
3/4 cup chicken broth
8 oz bow tie pasta
1/4 cup grated Parmesan cheese
Heat olive oil in a large skillet over medium-high heat. Add garlic and turkey. Cook, stirring occasionally, until turkey is cooked through, about 10 minutes.
Add broccoli, tomatoes, basil, cayenne, wine and broth. Reduce heat to low; simmer for 10 minutes.
Meanwhile, cook pasta according to package directions; drain.
Remove skillet from heat. Add pasta to skillet; mix well. Sprinkle with Parmesan.
Turkey with Bow Tie Pasta tip: You can save some time if you purchase stir-fry turkey meat, which is already cut into strips.
