Fried Mozzarella Sticks
Firm cheeses work best for these convenient Fried Mozzarella Sticks. Use whatever cheese you have on hand, for the least expensive option, such as Cheddar, which usually costs less than mozzarella.
Makes 24 Pieces
4 cup vegetable oil
1/2 cup all-purpose flour
1/2 cup seasoned bread crumbs
1 Tbsp water
1/2 tsp seasoned salt
24 bite-size pieces mozzarella cheese (about 8 ounces)
Heat oil in an electric deep-fryer or small pot to 365 F, or until a bread cube browns in 1 minute. Place flour and bread crumbs in shallow plates.
Combine eggs, water and salt in a small bowl.
Skewer cheese bites on a wooden skewer or chopstick. Roll in flour, then dip in eggs. Repeat coating. Roll in bread crumbs.
Fry mozzarella, a few at a time, in hot oil until browned, about 2 minutes. Remove; drain on paper towels.
Fried Mozzarella Sticks tip: The key to less greasy frying is the proper oil temperature. For the quickest and most accurate oil temperature reading, use either a deep fat thermometer or an electric fryer.
