Green Pea Medley
Leftover Green Pea Medley make a delicate and delicious soup. Place the peas in a blender container. Cover with 1 inch of chicken broth. Add 1 to 2 tablespoons sour cream and process until smooth. Serve hot or cold.
6 Tbsp butter or margarine
1/4 cup finely chopped iceberg lettuce
1 (16-ounce) package frozen peas
1/4 cup minced green onions
1 large sprig fresh parsley
1 tsp sugar
1 tsp salt
1/4 tsp pepper
Melt butter in a medium saucepan. Place the lettuce over the butter.
Add peas, green onions, parsley, sugar, salt and pepper to the saucepan.
Cover saucepan; simmer until the peas are tender, about 15 minutes. Stir occasionally.
Drain, if needed. Remove parsley sprig. Serve immediately.
Green Pea Medley tip: You can save time by using thawed peas and reducing the cooking time to 10 minutes.
