Double Cheese Meatloaf
Make an old fashioned Double Cheese Meatloaf just like grandma did. Substitute up to 1 cup of rolled oats for 8 ounces of the ground beef. Besides saving you money, the firm texture of the oats makes the meat loaf easy to slice.
1/3 cup ketchup, divided
2 Tbsp Dijon mustard, divided
4 oz (1 cup) shredded part-skim mozzarella cheese
1/2 cup bread crumbs
1/4 cup fresh parsley, chopped
2 Tbsp grated Parmesan cheese
1 tsp dried oregano
1 large egg
1 1/2 lb ground beef
1 medium onion, chopped
Preheat oven to 375°F. Spray a medium skillet with cooking spray. Heat over medium-high heat. Add onion. Cook, stirring occasionally, until slightly soft, about 3 minutes.
Mix onion, 1/4 cup ketchup, 1 tablespoon mustard, mozzarella, bread crumbs, parsley, Parmesan, oregano and egg in a large bowl. Add beef. Mix lightly.
Spray a loaf pan with cooking spray. Press beef mixture into pan. Combine remaining ketchup and mustard in a small bowl. Spread over top of meat loaf.
Bake meat loaf until set and cooked through, about 55 minutes.
Double Cheese Meatloaf tip: You can save 40 minutes of cooking time by microwaving the meat loaf. Press meat mixture into a glass loaf pan. Cover with plastic wrap. Microwave on HIGH for 7 minutes. Rotate loaf pan. Microwave for 5 minutes longer. Let stand for 10 minutes before slicing.
