A bunch of broccoli can go a long way. Steam or saute the florets for a side dish at dinner. Then peel the broccoli stems and chop or slice into rounds to cook for these wholesome Vegetarian Wraps.
1 1/2 cup chopped broccoli florets
1/4 cup cashews
1/2 red bell pepper, diced
1 green onion, chopped
1/2 cup mayonnaise
1 tsp sesame oil
4 whole wheat tortillas
1/4 cup shredded Parmesan cheese
Bring a small saucepan of water to a boil over high heat. Add broccoli. Return to a boil and boil until broccoli is bright green and crisp-tender, about 3 minutes. Drain. Cool slightly.
Meanwhile, toast cashews in a medium skillet over medium-high heat until fragrant and golden, about 5 minutes. Pour into a medium bowl.
Add broccoli, bell pepper, green onion, mayonnaise and sesame oil to bowl with cashews. Stir well. Spread a little mixture down center of each tortilla.
Top each tortilla with some Parmesan. Fold bottom edge of tortilla partially over filling. Fold right edge completely over filling. Roll from right side into a tight cylinder with top end open.
Vegetarian Wraps tip: To save a little time, you can use frozen broccoli florets. Heat them, covered, in the microwave without added water on HIGH for 3 minutes. Drain and press with paper towels to remove any excess liquid.
