Turn this Herb Orzo Pasta recipe into a tasty economical main dish meal for 4 people by adding chicken. Sauté 1 cup cubed white meat chicken in step 1 before you cook the garlic. Then proceed as recipe directs.
Ingredients
1 Tbsp olive oil
8 cloves garlic, sliced
1/2 cup orzo pasta
1 (14-ounce) can chicken broth
1/3 cup water
1/3 cup sliced green onions
1/3 cup sliced fresh basil
1/4 cup chopped fresh parsley
1/2 cup rice
Directions

Heat oil in a medium skillet over medium heat. Add garlic. Cook, stirring occasionally, until golden, about 5 minutes.

Add orzo and rice to skillet. Stir well. Cook, stirring occasionally, until pasta and rice are lightly browned. Add broth and water, stirring constantly.

Reduce heat to medium-low. Simmer, covered, until broth is absorbed, about 20 minutes. Remove from heat.

Add green onions, basil and parsley to skillet. Stir until just mixed. Serve immediately.

Herb Orzo Pasta tip: To slice fresh basil leaves quickly, stack several leaves, roll them like a cigar, then cut the roll into thin slices as if you were slicing cookie dough. Or you can snip the leaves with scissors right into the mixture.
