Sweet Potato Scones
You can save money and still serve these sensational Sweet Potato Scones by using either canned or frozen sweet potatoes sometimes labeled yams. Make sure you buy the unsweetened variety.
1 cup all-purpose flour
2 tsp baking powder
1/2 tsp salt
1 Tbsp sugar
1 cup mashed cooked sweet potato
3 Tbsp melted butter or margarine, divided
Preheat oven to 375°F. Sift flour, baking powder and salt into a large bowl. Mix well. Stir in sugar.
Combine sweet potato and 11/2 tablespoons butter in a large bowl; mix well. Add dry ingredients. Mix to form a soft dough.
Roll dough to 1/2-inch thickness on a floured surface. Cut with a 2-inch biscuit cutter.
Arrange rounds on a baking sheet. Bake until golden, about 20 minutes. Brush top with remaining butter.
Sweet Potato Scones tip: Save time by cooking the sweet potato in the microwave. Pick with a fork and wrap the potato in plastic wrap. Microwave on HIGH for 5 minutes and let stand for 5 minutes. Pierce with a fork to test for doneness.
