Grilled Russet Potatoes

Servings: 4

Prep Time: 10 minutes

Cooking Time: 1 hour

Partner: grilled tuna steaks

Most supermarkets offer russet potatoes at least two ways: large ones are loose; smaller potatoes are packed in 5- and 10-pound bags. The potatoes are the same, so buy them in bags for lowest price to save money on these Grilled Russet Potatoes.

Ingredients

4 russet baking potatoes

3 Tbsp butter or margarine, sliced

1 1/2 tsp salt

1/4 tsp pepper

1 cup grated Cheddar cheese

2 Tbsp chopped fresh parsley

3/4 cup half-and-half

Directions

  1. Preheat grill. Fold a 48-inch length of heavy aluminum foil in half widthwise. Cut potatoes into thin lengthwise strips as for French fries.

  2. Arrange potatoes on center of foil. Melt butter in a small saucepan; drizzle over potatoes.

  3. Sprinkle with salt, pepper, Cheddar and parsley.

  4. Fold up edges of foil slightly; pour in half-and-half. Bring the edges of foil together and fold to close securely. Place on grill and cook until potatoes are tender, about 1 hour.

Grilled Russet Potatoes tip: Save preparation time by cutting potatoes into 1/4-inch slices instead of shoestrings.
