Ten Flavors Whole Grilled Chicken
The mustard basting sauce gives this Ten Flavors Whole Grilled Chicken an extra dimension of flavor, but if you prefer, you can omit it. You'll save a little money, and you'll save the time it takes to mix it up.
2 Tbsp mild paprika
1 Tbsp pepper
1 Tbsp celery salt
1 Tbsp sugar
1 tsp garlic powder
1 tsp dry mustard
1/2 tsp cayenne
Grated peel of 1 lemon
1 Tbsp butter or margarine, softened
1 Tbsp Worcestershire sauce
1 (3 1/2 pound) chicken
1/2 cup chicken broth
1/2 cup lemon juice
2 tsp prepared mustard
Preheat grill. Combine paprika, pepper, celery salt, sugar, garlic powder, dry mustard, cayenne and lemon peel in a medium bowl.
Combine butter and Worcestershire sauce in a small bowl. Rub all over chicken, including inside cavity.
Rub chicken with paprika mixture all over, including under skin. Place chicken over low heat on grill.
Combine broth, lemon juice and mustard in a saucepan over low heat. Grill chicken, basting with broth mixture every 10 minutes, until juices run clear when meat is pierced with a knife, about 1 hour.
Ten Flavors Whole Grilled Chicken tip:To save some cooking time, split the chicken in half and grill it flat.
