Feta Topped Beef Fillets
Buttery tenderloins are the most expensive of the steaks. You can save money and still serve a satisfying Feta Topped Beef Fillets by substituting rib-eye or strip steaks for the tenderloins specified in the recipe.
1/2 cup crumbled feta cheese
2 Tbsp butter or margarine, softened
1 Tbsp fresh thyme
1/2 tsp Dijon mustard
1/2 tsp lemon juice
1/4 tsp pepper
4 beef tenderloin steaks, 1 1/2 inches thick
1 Tbsp olive oil
1/2 tsp lemon pepper
Combine feta cheese, butter, thyme, mustard, lemon juice and pepper in a small bowl; mix well. Shape into a log. Wrap in plastic wrap. Freeze for 30 minutes.
Meanwhile, preheat broiler. Brush steaks with olive oil. Sprinkle with lemon pepper.
Broil steaks 5 inches from heat for 7 minutes per side for medium-rare.
Top each steak with 1 slice of feta butter. Return to broiler. Broil until cheese mixture is hot and softened, about 1 minute.
