Three-Cheese Seafood Lasagna
Even imitation lobster can really pinch your budget. For a more affordable Three-Cheese Seafood Lasagna, use only shrimp. For greatest savings, stock up when shrimp are on sale and store in your freezer for up to 3 months.
2 Tbsp butter
1 1/2 cup imitation lobster or crab meat
1 1/2 cup peeled, deveined shrimp
1 large onion, chopped
1 red bell pepper, chopped
1/2 cup chopped celery
2 cloves garlic, minced
1 1/2 cup prepared spaghetti sauce
9 lasagna noodles, cooked
8 oz ricotta cheese
1/4 cup sliced green onions
1 cup shredded mozzarella cheese
10 oz prepared Alfredo sauce
1 cup grated Parmesan cheese
Heat butter in a large skillet over medium-low heat. Add imitation lobster, shrimp, onion, red pepper, celery and garlic. Cook, stirring, just until shrimp turn pink, about 3 minutes.
Preheat oven to 350°F. Pour 1/2 cup spaghetti sauce into a greased baking dish. Spread evenly. Combine ricotta, egg and green onions in a medium bowl.
Cover bottom of baking dish with 3 noodles. Spread one-third of ricotta mixture over noodles. Layer shrimp mixture, 1 cup spaghetti sauce, mozzarella, remaining noodles, then Alfredo sauce.
Spread Parmesan over Alfredo sauce. Bake, covered, for 40 minutes. Let stand for 10 minutes before slicing.
