If you have a choice of canned salmon varieties, select pink salmon, as it is the least costly variety. Or, save more by instead using canned mackerel in this Salmon Croquettes recipe, which is less expensive than any variety of salmon.
1/2 cup vegetable oil for frying
1 (15-ounce) can pink salmon
1/4 small onion, grated
1 cup cracker crumbs
1 tsp salt
1/4 tsp pepper
1 Tbsp lemon juice
Preheat oil in a deep skillet until a bread cube browns in 1 minute, about 375°F. Flake salmon into a medium bowl with a fork. Remove any bones.
Add onion, cracker crumbs, salt, pepper, egg and lemon juice to bowl. Mix well.
Shape salmon mixture into 8 patties.
Fry patties in hot oil in skillet until well browned, about 4 minutes on each side. Drain on paper towels.
Salmon Croquettes tip: Another easy way to tell if the oil is hot enough for frying is to stick the handle of a wooden spoon in the center. If bubbles form around the wood, its ready.
