German Pork Chops
You can buy standard-cut pork chops at a substantially lower cost than pork loin chops. So save the expensive chops for company. The standard-cut chops will only take 25 minutes to cook.
16 oz sauerkraut
1 (15-ounce) jar applesauce
1 Tbsp brown sugar
6 (1-inch thick) pork loin chops
1/2 tsp dried sage
1 Tbsp vegetable oil
2 Tbsp lemon juice
1/4 cup water
Preheat oven to 375°F. Grease a medium baking dish. Rinse sauerkraut; drain.
Combine sauerkraut, applesauce and brown sugar in a medium bowl; mix well. Spoon into prepared baking dish.
Rub pork with sage. Heat oil in a large skillet over medium-high heat. Add pork. Cook, turning once, until browned, about 2 minutes per side.
Arrange pork over sauerkraut mixture. Pour lemon juice and water over pork. Bake, covered with foil, until pork is tender, about 30 minutes.
To reduce the cooking time by 15 minutes, use precooked smoked pork chops.
