Citrus Grilled Chicken
Honey can be expensive in small quantities in the supermarket. Look for it sold in bulk in specialty stores and health-food stores. you'll need to provide your own container, but the savings on this Citrus Grilled Chicken will be worth it.
1 (8-ounce) can tomato sauce
1/3 cup olive oil
1/3 cup orange juice
1/4 cup white vinegar
1/2 tsp garlic salt
1 1/2 tsp dried oregano
1/2 tsp pepper
1/2 tsp salt
2 1/2 lb chicken pieces
1/4 cup honey
1/2 tsp dry mustard
Combine tomato sauce, olive oil, orange juice, vinegar, garlic salt, oregano, pepper and salt in a large bowl; mix well.
Place chicken in a large baking dish. Pour tomato sauce mixture over chicken. Let stand, covered, for 20 minutes at room temperature. Drain marinade.
Preheat grill. Grill chicken, turning occasionally and brushing with marinade, until nearly cooked through, about 20 minutes.
Combine honey and dry mustard for glaze. Brush over chicken and cook for 5 minutes longer.
Citrus Grilled Chicken tip: You can reduce the cooking time to 15 minutes if you use boneless chicken pieces.
