If strawberries are out of season, and unavailable, or priced too high, use 2 chopped peeled pears instead in this Citrus Salad. Even when berries are in season and priced low, pears may be the better buy.
1/4 cup sugar
2/3 cup pecan halves
2/3 cup vegetable oil
Juice of 2 limes (about 1/4 cup)
2 Tbsp orange juice
2 Tbsp sugar
1 tsp grated lime peel
1 tsp grated orange peel
6 cup torn romaine lettuce
6 cup torn leaf lettuce
1 red onion, thinly sliced
1 large orange, peeled, sliced or sectioned
1 pt strawberries, hulled, halved
Combine sugar and pecans in a small skillet. Cook over low heat until sugar melts. Stir to coat pecans. Spread on aluminum foil. Let cool. Break pecans apart.
Meanwhile, combine vegetable oil, lime juice, orange juice, sugar, lime peel and orange peel in a jar with a tight-fitting lid. Cover jar; shake well to combine.
Combine lettuces, onion, orange and strawberries in a large bowl.
When ready to serve, peel, pit and slice avocados. Add to bowl. Drizzle dressing over salad. Toss gently. Top with pecans.
Citrus Salad tip: If you are in a hurry, use canned mandarin oranges instead of taking the time to peel and section a fresh orange.
