Bean Pasta, with Broccoli

Lower your per-serving cost on the Bean Pasta, with Broccoli and serve 8 instead of 4 by increasing the pasta to 16 ounces and adding another cup of Great Northern beans. Increase the olive oil and Parmesan cheese to 1/3 cup each.

Ingredients

8 oz ziti pasta

1/4 cup olive oil, divided

2 cloves garlic, minced

1 small onion, chopped

1/2 tsp red pepper flakes

1/2 tsp salt

1 bunch of broccoli, chopped

1 cup Great Northern beans, drained

1 1/2 cup chopped tomatoes

1/4 cup chicken broth

1/4 cup fresh bread crumbs

1/4 cup shredded Parmesan cheese

Directions

  1. Cook pasta according to package directions. Drain. Add 1/2 tablespoon olive oil. Toss well. Mound pasta in a serving bowl.

  2. Heat 2 tablespoons oil in a large skillet. Add garlic, onion, pepper flakes and salt. Cook, stirring, until onion is tender. Increase heat to medium-high. Add broccoli.

  3. Cook, stirring, until broccoli is crisp-tender, about 5 minutes. Add beans, tomatoes and chicken broth to skillet. Cook, stirring occasionally, until some liquid evaporates, about 5 minutes.

  4. Heat remaining olive oil in a small skillet. Add bread crumbs. Cook, stirring constantly, until crumbs are crisp and browned. Pour sauce over pasta in bowl. Top with bread crumbs and cheese.

Bean Pasta, with Broccoli tip: Omit the crumb topping to save a few minutes.
