You can save both cash and calories by simply eliminating the mozzarella cheese from this Olive Pizza. The feta cheese alone delivers lots of flavor and is lower in fat than mozzarella.
1 1/2 tsp minced garlic
1 Tbsp olive oil
1 (12-inch) prepared pizza crust
1/4 cup pizza sauce
1/2 tsp dried basil
1 cup shredded mozzarella cheese, divided
4 oz feta cheese, crumbled
2 Roma tomatoes, each cut into 6 wedges
2 oz sliced mushrooms
12 sliced black or green olives
Preheat oven to 450°F. Combine garlic and olive oil. Spread over crust.
Spread pizza sauce over crust. Sprinkle with basil.
Spread 1/2 cup mozzarella cheese and feta cheese over crust. Layer tomatoes over cheese. Top with mushrooms, then olives.
Spread remaining cheese over pizza. Bake until cheese is melted, about 10 minutes.
Olive Pizza tip: Fully prepared pizza crusts freeze beautifully so keep extra on hand for super-quick focaccia the popular Italian flat bread. Simply brush the crust with olive oil, sprinkle with 1 teaspoon chopped fresh rosemary and bake until heated through.
