No Cook Truffles
The nuts in these No Cook Truffles add a touch of luxury. But if they put too much crunch in your budget, use only 1/2 cup, or omit them altogether. You may even find you prefer these candies without nuts.
Makes 40 pieces
2 squares unsweetened chocolate
3 oz cream cheese, softened
1 Tbsp milk
2 3/4 cup confectioners' sugar, divided
1/2 tsp vanilla extract
1/8 tsp salt
1 1/2 cup chopped nuts, divided
Melt chocolate in a small saucepan over low heat, stirring occasionally.
Meanwhile, combine cream cheese and milk in a large bowl. Beat with an electric mixer set at medium speed until smooth, about 1 minute.
Add 2 cups confectioners' sugar to bowl. Beat until well mixed. Add chocolate to bowl. Beat well. Stir in vanilla, salt and 1 cup nuts. Chill until stiff, about 20 minutes.
Roll mixture by teaspoonfuls into balls. Roll some of the balls in remaining confectioners sugar. Roll other balls in remaining chopped nuts. Chill until ready to serve.
No Cook Truffles tip: If you spray nonstick cooking spray into the container used for melting chocolate, the chocolate will slip right out.
