Curried Sweet Potatoes
You can save money on this already thrifty dish of Curried Sweet Potatoes by using 11/2 pounds of carrots instead. Peel and cut into 1-inch chunks, then proceed as recipe directs, cooking a few minutes longer if needed.
1 1/2 lb sweet potatoes
3 Tbsp butter or margarine
1 tsp curry powder
1/4 cup packed brown sugar
Preheat oven to 350°F. Peel sweet potatoes. Cut into 1/2-inch slices.
Melt butter in a small saucepan over medium heat. Add curry powder and brown sugar; stir well.
Arrange sweet potatoes in a baking pan. Spoon butter mixture over layered sweet potatoes.
Bake sweet potatoes, stirring occasionally, until tender and golden, about 25 minutes.
